Oatmeal Bars

As far as I am concerned anything that contains oats is a health food.
Who is with me?
Just overlook all the butter involved in this recipe and focus on the healthy oats.
Lets also focus on the fact that you can use any flavor of preserves you like in these "healthy" oatmeal bars.
I used blueberry on this batch.
I'm think I will try blackberry next.
Oh the possibilities are endless.
What preserves will you use?
Ingredients:
- 1 3/4 stick cold butter, cut into pieces
- 1 1/2 cups All-Purpose flour
- 1 1/2 cups oats
- 1 cup packed brown sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 jar of preserves (10 to 12 ounces)

Directions
1. Preheat oven to 350 degrees. Butter a 9x13 baking dish.
2. Mix together the flour, oats, brown sugar, baking powder, and salt.
3. Cut in the butter with a pastry cutter until coarse crumbs form.
4. Sprinkle half the mixture into the pan and pat lightly to pack it down.
5. Gently spread your preserves over the oat  mixture.
6. Sprinkle the remaining oat mixture over the preserves and lightly pat.
7. Bake 30-40 minutes (top should be golden brown). Let cool then cut into squares.

Pasta Primavera

Happy Sunday!
My wonderful husband wanted to go vegetarian for a week.
I wasn't crazy about it but I agreed because I'm such a wonderful wife ;)
Vegetarian isn't really on my radar.
When I plan dinner there is ALWAYS a meat involved.
It's in my blood. 
The way I was raised.
You have a meat and then two sides (which are usually carb/starch heavy)
Anyways, my hubby was sweet enough to print out some recipes for me so how could I say no.
He found a Pasta Primavera recipe by the lovely Giada De Laurentiis.
I will admit I was totally blown away by how much I liked this dish.
I think you should try it.
Soon.
Like tonight.

 Ingredients:
- 3 carrots, peeled and cut into thin strips
- 2 medium zucchini, cut into thin strips
- 1 onion, thinly sliced
- 1 yellow bell pepper, cut into thin strips
- 1 red bell pepper,cut into thin strips
- 1/4 cup olive oil
- 1 tablespoon dried Italian herbs
- 1 pound pasta
- 15 cherry tomatoes, halved
- 1/2 cup grated Parmesan
- salt and pepper to taste

Directions:
1. Preheat oven to 450 degrees.

2. On a large heavy baking sheet, toss all of the vegetables with the oil, salt, pepper, and dried herbs. Bake until the carrots are tender and the vegetables begin to brown, about 20 minutes (stir after the first 10 minutes).

3. Meanwhile, cook the pasta as directed on the box. Reserve 1/2 cup of the pasta water.

4. Toss the pasta with the vegetables in a large bowl. Add the tomatoes and the pasta water. Stir. Top with the Parmesan Cheese. Enjoy.

Such a pretty dish!

The Perfect Gift

As I've mentioned before, I have the worlds best sister in law. Sorry to all the other sister in laws but she really is the best. She is awesome for many reasons but today lets talk about her gift giving ability. 
I think gift giving is really stressful. Anyone else?
I'm always searching for that perfect gift that is thoughtful and unique.

When my sister in law gifted me a 3 month subscription to Birchbox shortly after giving birth I thought what a perfect gift! I loved getting the box in the mail every month and couldn't wait to see what was in it.
Birchbox is a great gift for men, women, birthdays, bridal showers, pick me ups, etc...

Now we can't forget our four legged friends! Barkbox is the equivelent to Birchbox but for doggies! 
How cute is that? What a perfect gift for someone with a new pup, or a sick pup, or a pup that needs some extra attention because there is a baby in the house now (poor Marley). 
They really do think of everything these days.

Wait there is more! Citrus Lane is the latest gift from the sister in law. It was Atlas' Easter present. I know, I told you she is awesome. It's a box wit baby items (age appropriate) and mom items. We get our first box in May and we can't wait. Okay Atlas has no clue but I'm sure he will love it when it gets here.

Spaghetti Squash Alfredo

True story.
I just ate spaghetti squash for the first time last weekend.
My lovely sister-in-law made it for me.
It was a party in my mouth.
So now I'm obsessed and I think its the coolest veggie ever.
During my nightly Pinterest session I stumbled upon this recipe and had to try it.
I use to LOVE me some Fettuccine Alfredo but stopped eating it because I always felt so guilty afterwards.
Not anymore folks.

Ingredients:
- 1 Spaghetti Squash
- 1 tablespoon of butter
- 2 1/2 tablespoons of flour
- 1 tablespoon of minced garlic
- 1 tablespoon cream cheese (room temp)
- 1 1/2 cups milk
- 1 cup grated Parmesan Cheese
- Salt and pepper

Directions:
1. Pre-heat oven to 350. Poke a few holes deep into the squash with a large knife. Place squash on baking sheet and bake for 60 minutes. Let squash cool for 10-20 minutes after baking. Cut in half length wise then scoop out the seedy inside leaving the "spaghetti strands." Use a fork to gently scrape the "spaghetti strands" into the middle. 

2. Melt the butter in a sauce pan. When melted add minced garlic and cook for 1-2 minutes over medium heat. Whisk in the flour and cook for 1 minute while stirring. Stir in the cream cheese then the milk. Bring mixture to a simmer and the sauce thickens. Remove from heat and stir in the Parmesan Cheese and season with salt and pepper.

3. Pour Alfredo sauce over each squash half and gently stir. Sprinkle with a little more Parmesan Cheese and place under the broiler for 2-4 minutes until golden and bubbly. 

*I used low-fat cream cheese and milk to make it lighter.
*One spaghetti squash is plenty for two people but this recipe can easily be doubled if preparing two squash.

Breakfast Casserole with Herb Seasoned Stuffing

When you have a baby things don't always go as planned. 
Okay they like never go as planned.
So when I invited friends over for breakfast last week I knew I needed a dish that I could make in advance.
I could just see the baby throwing a fit or having a diaper blowout while I was trying to get breakfast ready.
Then my friends would walk in on a hot mess, both me and baby and immediately regret saying yes to breakfast at my house with a screaming poop covered baby and a disheveled mom.
You get the picture?
Not pretty. 
So a breakfast casserole that you make the night before (when baby is sleeping) was the obvious route to take.
This dish is easy to make and the herb stuffing adds such a nice flavor.
Give it a try this weekend!


Ingredients:
- 1 roll of breakfast sausage, regular or hot
- 1 package of Pepperidge Farm herb seasoned stuffing
- 1 cup sharp cheddar, shredded
- 1 cup pepper jack, shredded
- 1/2 cup diced onion
- 8 eggs
- 2 cups half and half
- 1 1/2 cups milk
- salt and pepper

Directions:
1. Start by cooking the sausage and onion, crumbling, until browned. Drain and set aside.

2. Lightly grease a 9 x 13 baking dish. Spread herb seasoned stuffing on the bottom. Top with the cheddar and pepper jack cheese. Sprinkle cooked sausage and onion mixture over the cheeses.

3. In a bowl, beat the eggs with the half and half and milk. Season with salt and pepper.

4. Pour egg mixture over sausage. Cover and refrigerate over night.

5. Bake at 350 for 45-60 minutes. Let stand 10 minutes before cutting.

Buffalo Chicken Lettuce Wraps

Anyone else weird about their chicken wings?
It took me awhile to fully embrace eating chicken right off the bone.
Sometimes it still freaks me out. 
Like when the hubby orders chicken wings from Domino's.
Yuck!
I love all the flavors that go along with chicken wings. 
 When I saw this recipe from skinnytaste I knew I would like it.
 It cooks in the crock pot which is awesome news because I can put it on while the babe is napping. 
That is IF he naps. Sometimes he likes to go on a nap strike. That makes for a really fun day. 
Anyways, you should totally make this dish. 
 Ingredients:
- 3-4 boneless skinless chicken breast
- 2 stalks of celery
- 1/2 onion diced
- 1 clove of minced garlic
- 16oz chicken broth, low-sodium and fat free
- 1/3 cup Franks Red Hot Buffalo Wing Sauce
- Iceberg Lettuce
- Blue Cheese or Ranch Dressing

Directions:
1. Put the chicken, diced onion, celery, and garlic in the crock pot  Pour in the chicken stock. It should cover the chicken breast, if not, add water. Cover and cook on high for 4 hours.
2. After 4 hours, remove the chicken. Keep 1/3 cup of the cooking broth and discard the rest. Shred chicken and return to crock pot. Add the 1/3 cup of cooking broth as well as 1/3 cup hot sauce. Cook on high for 30 minutes.
3. Place shredded chicken in a lettuce leaf and top with your choice of condiments (blue cheese crumbles, blue cheese dressings, ranch dressing, celery, carrots, etc...) Roll it up and enjoy!

We used the leftover chicken in a salad the next day.
Yum!

Is It Really March?

So long February.
Atlas enjoyed his first Super Bowl.
He is a big 49ers fan.
I made Cowgirl Cookies again.
I will use any excuse really.
These were for Valentines Day.

I found a new favorite wine.
It's called The Count and I want a case of it immediately!

Marley is still...Marley
Sleeping a good 15-20 hours a day.
When he is awake he is either eating or licking Atlas' feet.
Weird.
Atlas turned 4 months old.
How is that possible?
I feel like I should start planning his first birthday.
Okay who am I kidding, I've already been brainstorming themes.

Nutella Banana Bread

Nutella + Banana Bread
In the words of Barefoot Contessa, "how bad could that be?"
It wasn't bad at all. In fact it was delicious.
Especially when it is warm with a nice cold glass of milk!
Ingredients:
- 5 tablespoons of Nutella
- 3 tablespoons plus 1 teaspoon canola oil, divided
- 3 tablespoons butter, softened
- 1/2 cup packed brown sugar
- 2 medium ripe bananas, sliced
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2/3 cup buttermilk *

Directions:
1. Preheat oven to 350 degrees.
2. Combine Nutella and 1 teaspoon canola oil in a microwave-safe dish. Microwave at 30 second intervals until melted, stirring every time.
3. Combine 3 tablespoons canola oil, butter, brown sugar, and bananas in a large bowl. Beat at medium-high speed until well blended. Add eggs one at a time, beating well.
4. Combine flour, baking soda, baking powder, and salt. Beating at low speed, add flour mixture and buttermilk alternately to banana mixture, beginning and ending with flour mixture.
5. Pour half of the batter into a greased 9 x 5 loaf pan. Top with the melted Nutella mixture. Pour remaining batter over Nutella. Using a toothpick, swirl batter.
6. Bake at 350 degrees for 55 minutes. Cool for 10 minutes in pan on a wire rack.

* If you don't have buttermilk on hand you can always make your own by pouring 1 tablespoon of lemon juice or white vinegar in a measuring cup then add enough milk to bring the liquid measurement  to 1 cup. Let the mixture stand for 5 minutes. Then just use whatever amount the recipe calls for and discard the remaining.

Roasted Rosemary Almonds

I cooked a pot roast the other day. It was yummy. I always misjudge the amount of meat I need. I was cooking for 4 people but I bought enough meat to feed The Duggars. Do you guys do that? I also bought way too much fresh rosemary. I started to feel really bad about all that sweet delicious rosemary left unused in my fridge but then I remembered this recipe and suddenly didn't feel so bad anymore. So, I made a batch, and then I made another batch, and then I made one more batch. Oops. In my defense I did give 2 batches as gifts because I'm nice like that. 
Look how beautiful!
Ingredients:
- 2 cups of raw almonds
- 1 Tbsp olive oil
- 1 Tbsp fresh chopped rosemary
- 1 tsp chili powder
- 3/4 tsp salt
- fresh cracked pepper

Directions:
1. Pre-heat oven to 325 degrees.

2. In a bowl, combine the almonds, oil, rosemary, chili powder, salt, and a little cracked pepper. Stir to coat the almonds.

3. Pour almonds onto a baking sheet. Bake for 20-25 minutes. Let cool then enjoy.

As I mentioned earlier I gave some as gifts.
A mason jar, a piece of cloth, some twine, a tag and boom!

Blackened Tilapia with Cilantro Lime Butter

Happy Sunday everyone! The baby is taking a nap, I made myself a lovely breakfast, and now I'm enjoying my second cup of coffee. Life is good! Now let me help you plan dinner. Oh I know, how about Blackened Tilapia with Cilantro-Lime Butter? Boy that was easy. I promise this dish is so good it could turn around a non-fish eater. You know who I'm talking about. I double dog dare you to try this dish and then tell me you don't like fish. 
Ingredients:
- 1 lime
- 2 Tbsp butter at room temperature
- 2 Tbsp chopped fresh cilantro
- 2 garlic cloves minced (or use the refrigerated already prepared minced garlic)
- 1 Tbsp canola oil
- 4 tilapia fillets
- 1 Tbsp blackening seasoning

Directions:
1. In a small bowl mix the zest of the lime, juice from the lime, butter, cilantro, and garlic. Stir to blend then set aside.

2. Heat the oil in a large cast-iron skillet over high heat. Rub the blackening seasoning on the tilapia fillets. Once the oil is hot, add the fish and cook 3-4 minutes (don't disturb it, just let it cook and yes the house will probably get smoky). Flip fillets over and cook another 1-2 minutes.

3. Transfer the tilapia to a plate and top immediately with a bit of the cilantro lime butter. The butter just melts right into the fillets. Heaven!

My New Favorite Snack

I discovered a new blog. Well new to me at least. Its called Bluebird and I'm kinda obsessed. They are moving to Nashville soon. We should probably hang out. I think Atlas and Sailor could be best of buds. I mean their names already sound great together. Her hubby has a rocking mustache and beard and my hubby is working on a pretty sweet stache himself. I mean all signs point to yes. We should totally hang out. Okay let me stop before it gets creepy and talk about what this post is really about. BEET BREAD...well that is what my husband calls it. I saw it on Bluebird and fell in love. Its a perfect snack!

Ingredients:
- Bread (sourdough if ya got it)
- Cheese spread (goat cheese, alouette, laughing cow, etc..)
- Pickled beets
- Sea salt
- Arugula 

Directions:
1. Toast some bread, spread on the cheese, top with beets, sprinkle with sea salt, pile on the arugula, chow down!

4 Months!

My baby is 4 months old!
We went for a check-up and round two of his shots today.
Thankfully his thighs are so chunky that he barely felt the needles.

He's starting to pay more attention to his brother but Marley doesn't seem to notice him unless he's crying in which Marley quickly leaves the room.
He's a pretty laid back guy considering we slapped these sunglasses on him and he acted like he was born to wear them.
I think he realized how cool he looked in them and just went with it.
He likes to look at himself in the mirror.
He thinks he is pretty handsome which I must agree with.
Can't wait to see what the next four months bring.

Orzo With Tomatoes and Peas

It was clean out your pantry/fridge day around here again.
 I'm really trying to do better about not letting food go bad.
Plus it challenges me to come up with a recipe.
Its really a win win situation for all.
I've had this big jar of orzo in my pantry for wayyy to long.
Like a year maybe. I was sick of looking at it.
So...I ate it with some peas, tomatoes, and cheese :)
*That is some Parmesan Crusted Chicken in the picture that I served it with.
Both my hubby and sister-in-law said it looked like fish.
So my chicken looks like fish huh?
I'm still trying to figure out if that's a good thing or a bad thing.
Either way this is dish would be good with chicken or fish.
Ingredients:
- 1 cup orzo
- 1 cup frozen peas
- 1 cup diced fresh tomatoes
- Chicken Broth
- 1 teaspoon minced Garlic
- 1/2 cup grated Parmesan Cheese
- Salt and Pepper
- 1 tablespoon butter
- 1 tablespoon olive oil

Directions:
1. Cook orzo according to package but instead of using water use chicken broth (you don't have to but I think it makes the orzo more flavorful).

2. In a large saute pan heat butter and olive oil over medium heat. Add garlic, frozen peas, and tomatoes. Cook for 2 minutes.

3. Drain orzo and add it to the saute pan with the peas and tomatoes. Season with salt and pepper. Cook for 2 more minutes.

4. Finish by stirring in the grated Parmesan Cheese.

Strawberry Scones

Man have I been busy. Important things happening around these parts.
Not only did I watch season 1 and 2 of Downton Abbey but I managed to catch up to the latest episode in season 3. Yeah, you read that right. Its a miracle really when you consider I have a 4 month old baby and the hubby was out of town. I got so immersed in it that I was half expecting my lady maid to walk in and dress me for the day (if you don't understand what that means you haven't watched the show and well you should go watch it immediately). So in honor of Downton Abbey and their fancy ways, I made scones! We had a huge carton of strawberries from our latest Costco rampage and they were on the verge of being wasted so I thought why not.
Shhhh don't tell anyone but I am a messy cook.
Aren't they beautiful? Or as Lady Mary would say they are lovely.
 
Ingredients:
- 1 cup strawberries, diced into bite size pieces
- 5 tablespoons sugar (granulated)
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 6 tablespoons butter, room temperature and cut into cubes
- 2/3 cup heavy cream

Directions:
1. Preheat oven to 400 degrees. Sprinkle diced strawberries with 1 tablespoon sugar and set aside.

2. Combine 3 tablespoons of sugar with flour, baking powder and salt. Cut in the butter, using a pastry cutter, fork, or two knives (google it for demonstration if your not sure what to do). Stir in the strawberries then add the heavy cream. Use spatula to gently stir dough until it holds together.

3. Turn onto a lightly floured surface and knead a few times to mix all the ingredients. Be gentle so you don't break up the strawberries and don't overwork the dough. Sprinkle dough with flour if it gets sticky.

4. Press the dough into a circle 3/4 inch thick. Cut circle into 6-8 wedges, then transfer wedges to the cookie sheet, leaving at least 1/2 inch of space between them. Bake 15 minutes.

5. Sprinkle with 1 tablespoon of sugar and bake 5-10 more minutes or until the tops are beginning to brown.

Cookie Butter Frosted Brownies

Since I last posted about my new best friend, Cookie Butter, I've been experimenting with different ways to consume it. So far I've determined there is not a wrong way.
First I started just eating it off of a spoon...delish.
Then I tried dipping pretzels in it...also delish.
My friend tried it on an waffle and reported that too was delish.
Then I found this recipe and died.
Are. You. Serious!
Brownies AND Cookie Butter!
I had to try it immediately.
I didn't have all the ingredients for Laurens brownies but I will be baking them in the future.
Luckily I had a box brownie mix in the pantry just waiting for this special occasion.
 
Ingredients:
- Your favorite brownie mix, box or from scratch prepared as directed.
- 3 tablespoons softened butter
- 3 tablespoons of cookie butter
- 1/2 teaspoon vanilla extract
- 1 cup powdered sugar
- 1 tablespoons milk
 
Directions:
1. Stir softened butter, cookie butter, vanilla, and sugar together until a thick paste forms. *It will be THICK and your arm will be tired but trust me just keep going.
2. Slowly stir in milk and then whisk vigorously until smooth. *Again another arm workout. No need for the gym the day you make these. I ended up adding a little more milk to reach that smooth consistency so feel free to do the same.
3. Once the brownies cool, spread frosting on top and enjoy.

Chicken Pomodoro

 While I was cleaning out/organizing my recipe binder I found this little gem hiding behind my chicken piccata recipe. It was scribbled down in my awful handwriting and just begging for me to give it a whirl. How could I resist with an ingredient list that included butter, heavy cream, and vodka. Umm about that baby weight...
 
Ingredients:
- 1 package of chicken cutlets
- all purpose flour
- salt and pepper
- olive oil
- 1/4 cup vodka
- 1 teaspoon minced garlic
- 1/2 cup chicken broth
- Juice of one lemon
- 1/2 cup diced fresh tomato
- 1/4 cup heavy cream
- 2 tablespoons butter
 
Directions:
1. Start by seasoning the chicken with salt, pepper, and lightly dredge in flour. Heat 2 tablespoons of olive oil in a large saute pan over medium high heat. Cook chicken for 3 minutes on each side. Remove from pan and keep warm.
2. Deglaze pan with vodka and add minced garlic. Whisk until vodka is almost cooked out then add the chicken broth, lemon juice, and diced tomatoes and cook for 2 minutes.
3. Return chicken to pan. Add heavy cream and butter. Let chicken cook in mixture for 2 minutes on each side.
4. Plate chicken and spoon sauce on top. Next time I think I will serve this over some pasta (I'm thinking some orzo might be nice).

I need help.

What is the heck is cookie butter you ask?  
It's delicious that's what it is.
I described it as Christmas is a jar.
Promise me you will go to Trader Joes and buy some.
If you don't have a Trader Joes I will personally ship it to you.
Seriously its that good.
During my daily browsing session on Etsy I can across these adorable organic baby rattle/teether at Smiling Tree Toys
They have so many cute designs and you can customize them as well.
What baby wouldn't love this? Or pregnant mom...hello baby shower gift! 
I was extremely picky when it came to purchasing a case for my phone.
It had to be pretty to look at AND do its job.
And by job I mean protect my phone because I drop it all the time!
So after searching high and low and bugging my husband for his opinion I finally found the one at Cuptakes.
Isn't it beeaauuutiiifull?
Yes, it may be a little expensive but for something that I carry around 24/7 I'd say it is well worth it.
I've had it for about 4 months now and dropped it a good 10...okay 20 times now and its still perfect.
 
Okay last but not least...my new bkr water bottle.
Its glass with a silicone sleeve!
I've convinced myself I have or will have cancer from using plastic water bottles.
Plus they get gross after awhile and if you use anything but water in them the flavor is stuck forever. Am I right people. So who is with me? Get yourself one immediately.

MVP Chili

As I mentioned in my Super Bowl Recipe Round-Up post, I am making chili on Sunday.
We are no stranger to chili in this house. Its one of my husbands favorite things to cook. He never uses a recipe yet it always turns out delish. What can I say, the man is talented. Anyways, I am doing the cooking on Sunday and unlike the husband I will be using a recipe.
Its called MVP chili.
Very fitting.
Ingredients:
- 1 package Italian Turkey Sausage (remove the casing)
- 1 large onion diced
- 1/2 teaspoon minced garlic
- 2 tablespoons chili powder
- 1/4 teaspoon cumin
- 1 bottle dark beer (12 oz) or you can use chicken stock
- 1 (28oz) can crushed tomatoes
- 2 tablespoons tomato paste
- 1 can (15.5oz) black beans, drained
- 1 can (15.5oz) red kidney beans, drained
- 1 cup corn
- salt and pepper to taste

Directions:
1. De-case sausage and saute in a large pot over medium-high heat.
    Use spoon to crumble sausage as it cooks.
2. Once sausage is browned stir in onion, garlic, chili powder, and cumin.
    Continue cooking for 5 minutes on medium heat.
3. Add beer and allow the mixture to simmer for an additional 5 minutes.
4. Stir in tomatoes, tomato paste and simmer for 10 minutes on medium-low.
5. Stir in beans and corn and season to taste with salt and pepper.

I like to serve mine with jalapeno corn muffins, some shredded cheese, and a dollop of sour cream.

January According To Instagram

I've become obsessed with Instagram lately. Just ask the hubby. He is over it. I may be a little late on the Instagram train but that's okay because I was busy making a human last year. Come join me @leanneinwonderland1.
 
Cocktail hour at our house.
We seem to have many more of these since having a baby.
Its helping keep us sane.
The hubby turned 29!
He wasn't too excited.

This little guy just keeps getting cuter and cuter!
I put up another box of baby clothes that no longer fit.
Tears.
I'm eating this on the reg.
 I can't get enough.
This and coffee make getting up at 6:00 slightly easier.
