Homemade Oreo Cakesters
Last week my mom called to say she was making "Whoopie Pies" for my little trip home. My mouth watered, my heart sang, and my thighs jiggled. These little suckers are unbelievable! Don't get your hopes up for the recipe though. I don't have it because I am afraid. It would be like housing a deadly weapon. I think there are cups of Crisco involved...yikes! But just to tease you imagine eating an oreo cakester on crack. I just couldn't pry my fingers away from them at home. We ate them for breakfast, mid-morning snack, lunch, afternoon snack, appetizers, and dessert. I love them and I love my mom for making them.

Diet Coke Slushy
Marley was in heaven this weekend as we traveled home to West Virginia. My mom...Marley's grandmaw did a good job of spoiling him. She froze a diet coke and Marley could not get enough of it. My mom held it for a good twenty minutes as Marley attempted to get the slushy goodness out. I'm pretty sure his tongue was frozen and he was in a diet coke coma.

Guacamole!
I have in my opinion the most delicious guacamole recipe. All my co-workers agree as well. I'm not gonna lie, I can eat the whole batch by myself and I have. Its the perfect summer dip and avocados are nice and ripe this time of year.
1. 3-4 soft but not mushy avocados diced
2. 1 small red tomato diced
3. 1/2 of a red onion diced
4. A dollop of sour cream
5. As many shakes of Tabasco as you like
6. Salt and pepper
7. Garlic salt
8. Squirt or two of lemon juice
Just combine all the above ingredients. I like to add the avocados last so they don't get so mushy while your stirring. I recommend tasting as you go. You might like it creamier so add more sour cream. Some like it very spicy so add more Tabasco. You could even add cilantro if you like.

Enjoy with chips, on tacos, on burritos, on burgers, or just a spoonful.

Fathers Day Breakfast
Marley decided that we should make a special breakfast for Chad since it was fathers day. Only problem was he didn't tell me about it until Sunday morning and it was too late to go to the store. We just had to make due with what was in the fridge. Here is what we came up with:
1. Puff pastry
2. Eggs
3. Bacon
4. Heavy Cream
5. Cheddar cheese
6. Garlic - I think it is Chad's 2nd love. He puts it in everything
Lay the puff pastry in a baking dish. Trust me it doesn't have to be pretty. Mine was tearing and wasn't completely thawed. Beat up 6 eggs with salt, pepper, and 1/2 cup cream. Stir in 1 cup cheese and as much crispy bacon and garlic as you like. I think I used 4 or 5 thick slices of bacon and 2 garlic cloves. Pour mixture right over the puff pastry and bake at 350 for 30 minutes or until the eggs set. I really don't think you can mess this recipe up.
Marley didn't help out much but he got all the credit...lazy dog.

Hump Buddies
Marlie has a boyfriend and his name is Franklin. It all started back in October when my co-worker brought her Daschund over for a play date with Marley. Franklin was immediately over Marley and looked out the door for his mom but Marley was smitten. They didn't see each other much after that but they soon reunited at doggy day care. Now, every time I pick Marley up from day care they tell me three things: 1) Marley is welcome anytime 2) He played hard 3) He humped Franklin all day. They tell me its not aggressive like he is trying to show his dominance but rather he just enjoys it. Franklin on the other hand does not.

I just don't have the heart to tell Marley that Franklin's just not that into him.

Spicy Shrimp vs. Stuff Shrooms
Dinner on Friday night consisted of an old favorite (stuffed mushrooms) and a new addition (spicy shrimp). Both dishes are very easy and delicious. They seemed to be battling it out in my mouth and stomach for title of best dish that night but I have to say it was a tie.
Yes folks you are seeing correctly. Those are pats of butter all over the shrimp. Paula Deen would be proud.

No Excuses
Want an easy, fresh, satisfying meal? Of course you do! Well whip this little concoction up immediately.
1. One package of fresh cheese tortellini
2. Marinara sauce (I used Buitoni)
3. Chicken breast
4. Various veggies (I used zucchini and onions)
Grill up 1-2 chicken breast
Saute up some veggies
Boil pasta as directed
Heat up some marinara
Toss is all together
Sprinkle with Parmesan
Put it in your mouth....enjoy.

Worthless
Apparently Marley is aware that Sunday is the day of rest because that's all he did. Usually he is pretty high strung and runs circles around the apartment but not on Sunday. He spent the entire day trying to get the treats out of his new toy and sleeping. Several times during the day he went missing and I found him laying in the bed with all the lights off.
